Borrowed from Hebrew שָׁחַט (shakhát, to slaughter), the vowel likely from Hebrew שׁוֹחֵט (shokhét, slaughterer, butcher) and Yiddish שוחט (shoykhet, slaughterer, butcher). Compare German schächten.
