From πέσσω (péssō, “to cook”) +‎ -τρῐᾰ (-tria). Reflects Proto-Indo-European *pékʷ-tr-ih₂ ~ *pkʷ-tr-yéh₂s (“female cook”), from *pekʷ- (“to cook”), compare Latin coctor m, Sanskrit पक्तृ m (paktṛ́).
