Possibly borrowed from Ainu エトゥ (etu, nose; snout; bill of a bird), from the way the characteristic mouth may resemble the bill of some birds.[1]

Cited in Japanese since at least 1847.[2]

As with many terms that name organisms, this term is often spelled in katakana, especially in biological contexts (where katakana is customary), as エツ.

The katakana spelling appears to be more common.
