Apparently from the wildcard *, indicating any sequence of characters, and Unix and Linux.

1. (computing, Internet) Unix and various other similar and/or compatible operating systems.

   Linux, Mac OS X, AIX, Solaris, and DG/UX are examples of *nixes.
