One NPR Radio columnist Baxter Black, former large animal vetinarian, says Cowboys are known for over-reacting when insulted, attacked etc., and we knew Bush was a cowboy when we hired him.

A recent item on PBS mentioned with humor, that Poles (many who like the US quite a bit right now) think cowboys milk cows. It should be mentioned somewhere that Dairymen milk cows, and that Cowboys would mostly think it was beneath their dignity to do so. Cowboys herd BEEF cows, almost exclusively. Dairymen typically wear baseball caps, although some might wear cowboy hats, cowboy hats would get knocked off when they lean into a cow and do not seem popular.

I think the definitions could be improved. The core meaning of course is a man who takes care of free range cattle in the American West, from the end of the Civil War on. There were never a whole lot of these, but lots of guys who wear cowboy hats. I have also never heard that merely being a fan of country music makes you a cowboy.
