Etymology edit
From boz (“grey”) + baş (“head”). Originally referred to large meatballs ("grey heads") and the soup made with them as the main ingredient; this soup is now referred to as küftə-bozbaş, since the word bozbaş itself can mean any meat soup (usually on with mutton as main ingredient).
