It's probably from one of the inflected forms of breken (e.g. singular imperative breke) rather than from the infinitive proper. However, even if it's from the infinitive, final -n tends to be lost in Middle English (e.g. gamengame, *filmenfilm); the resulting final vowel could then be lost/syncopated (compare modern English game, film with lost final vowel).
