Meriam-Webster & OED both contain 'evaluable' but none of 'evaluatable', 'unevaluable' or 'unevaluatable'. 'Evaluable' and 'Unevaluable' have far more hits in Google than 'evaluatable' and 'unevaluatable'. Not sure if there is a right spelling, but it looks like the versions without the t are more common.
