From Arabic بَاذِنْجَان(bāḏinjān), from now archaic Persian بادنگان(bâdengân), from Sanskrit भण्टाकी(bhaṇṭākī, aubergine), reshaped under the influence of mela(apple). Compare Modern Greek μελιτζάνα(melitzána), Sicilian milinciana and Medieval Latin mēlongena.
