From Middle English simenel (also simle), from Old French simenel (fine wheat flour; flat bread cake, Lenten cake), probably by dissimilation from Vulgar Latin *siminellus, a diminutive of Latin simila (fine flour) (see semolina). Compare also Middle Dutch semel, Middle Low German semele.
