begins; soften half ateaspoon-ful of gelatine and the tablet of pinkcoloring material that conies in somegelatine packages (if this be not athand tint later on with color paste)in a tablespoonful of cold water andadd to the syrup, when it is taken fromthe fire. When cold add one cup oflemon juice and freeze as usual. In-stead of the lemon juice a cup and ahalf of fresh strawberry juice and thejuice of a lemon may be used. Boil half a cup of sugar and one-fourth a cup of water until it will spina thread two inches in length; pour measures of ice and salt, about threehours. The bombe style is a variation;the usual style is to dispose the frozenmixture in the bottom of the mold,make it smooth on the top, then turnin the Tortoni mixture and let standin the ice and salt three hours orlonger.
