Some Pons works (e.g. books.google.com/books?id=7fx6kcXGyosC&pg=PA599) translate English hash brows as German Rösti and add "mpl" (masculine plural).
Regarding Pons' information:

• If it is a plurale tantum, then it's problematic to determine the gender.
• If it is a plural as the English term is plural, it could mean that there is the masculine singular Rösti with the plural Rösti (der Rösti, die Rösti).

Regarding findings:

• "der Rösti" usually is the genitive or dative of the feminine or a plural, not a masculine nominative singular.
• "einen Rösti" (masculine nominative singular) can be found in a few books - might be enough to attest it -, but these books are not dictionaries (wouldn't attest anything, but can be helpful anyway) or cooking books. Thus this could be a colloquial form.
• "den Rösti" is usually dative plural (like "Zu den Rösti [...]", "mit den Rösti"), but might sometimes be masculine nominative singular (like in Dr. Ötker e-books, but the usage and gender in these books might vary).
