Manchego (countable and uncountable, plural Manchegos)

  1. A firm, compact cheese made in the La Mancha region of Spain, aged for between 60 days and two years and made from the milk of Manchega sheep.
  2. A North American, industrialized cheese made from cow's milk that melts and is similar in taste to Monterey Jack common in Mexico and Spanish-speaking regions in the US.
