Ultimately from Latin cervēs(i)a. First attested as cervese in 1252/8; cervogia is documented from 1348 onwards.
The form with /ˈi/ may come directly from Latin; those with /ˈe/ or /ˈo/ seem to reflect the Old French cerveise~cervoise.
