Uncertain. Maybe variation of an earliest form spirlonga so that it can possibly come from Latin ex + perlongus (very long, which lasts a long time). Alternatively from a variation of Latin bis + longus (long twice). Compare Italian spilungone, Spanish pilongo, Portuguese pilungo.
