From Middle High German griebe (piece of fat, crackling), from Old High German griobo (coarse). Probably ultimately related to the root of grob (coarse).

Compare German Griebe (“piece of fat, crackling”, in dialects also other kinds of greasy foods), English greaves (borrowed from Low German).
