I moved the main entry to Catherinette, because it is easy to attest with the upper case. For the original lower-case version, I could only find two quotes, one in scare quotes and the other italicized. In all of these cases, the word is used not entirely generically for an unmarried woman over 25, but for such a woman who participates in the festival of St. Catherine.
