- a potato that has been steamed pre-peeled without rinsing, causing the potato starch remaining on its surface to gelatinize and form a rubbery skin once it's dried
Usage notes edit
- Mostly used to describe rubbery potatoes produced in the large canteen kitchens of schools and other institutions that feed large numbers of people.
